convEGGtor or EGGspander: which do I need first?

Different jobs, different priority order.

The convEGGtor is the first accessory most new owners add. It is a ceramic heat shield that turns the Egg from a direct grill into an indirect oven and smoker, which is what you need for low-and-slow brisket, pulled pork and ribs.

The EGGspander is the capacity upgrade. It adds multi-level racking so you can cook two or three dishes on different levels at the same time, or run half-direct, half-indirect setups.

Buy order: convEGGtor first, EGGspander when you outgrow single-level cooking.

Which Big Green Egg cover (A, B, C, E or H) fits my Egg?

Cover sizing depends on which Egg you have and which nest or table it sits in:

Cover A: Large, XL or 2XL Egg in a Modular Nest.

Cover B: Large or XL Egg in an intEGGrated Nest+Handler or standard Nest, and a Medium Egg in a Modular Nest.

Cover C: XL Egg in an Acacia Table, and a Medium, Large or XL Egg in a Modular Nest with an Expansion Frame.

Cover E: Large Egg in an Acacia Hardwood Table, as in our Large Egg Acacia Table bundle.

Cover H: Medium Egg in an intEGGrated Nest+Handler or standard Nest, Small Egg in a Nest, and MiniMax in a Portable Nest.

What warranty do Big Green Egg accessories carry?

Big Green Egg Australia warranty terms depend on the part. The convEGGtor and ceramic pizza and baking stones carry a limited 3-year warranty.

Metal, stainless steel and cast iron components carry a limited 5-year structural integrity warranty. Rust, discolouration and surface wear are not covered unless the part fails structurally.

Wood EGG Mates and hardwood tables, gaskets and the temperature gauge carry a limited 1-year warranty.

Consumables such as cleaners, scrubber pads, butcher paper and fire starters are not covered by a warranty term. Each product page shows the term that applies to that item. Bring your proof of purchase to us for any warranty claim.

How do I season a Big Green Egg cast iron grid or skillet?

Big Green Egg cast iron arrives pre-seasoned, but a maintenance season after every 4 to 6 cooks keeps it non-stick and rust-free.

Standard maintenance season: after a cook (Egg still warm but not blazing), rub the grid or skillet down with a thin layer of grapeseed or canola oil using a paper towel. Wipe off excess. Let cool. Done.

Deep re-season if it has rusted or stripped: scrub the rust off with steel wool. Coat lightly with oil. Place in the Egg at 200°C for 1 hour. Let cool. Repeat 2 to 3 times until the surface darkens evenly to deep black-brown.

Never wash cast iron with detergent. Wipe clean with hot water and a stiff brush only.

What temperature do I cook pizza at on the Egg?

320°C to 340°C is the sweet spot for Neapolitan-style pizza on the Pizza & Baking Stone.

Setup: convEGGtor in place (indirect), pizza stone on top of the convEGGtor rather than directly on the grid, all preheated together for at least 30 minutes before the first pizza goes on.

Cook time at 320°C is 3 to 4 minutes. Turn the pizza halfway through.

Below 280°C the base crisps without the leopard-spotted blistering. Above 360°C the base can burn before the toppings cook.

How often should I replace the Big Green Egg gasket?

The felt gasket on a Big Green Egg typically lasts 3 to 5 years of regular use. Signs it is going: visible compression of the felt, smoke escaping where the dome meets the base, or charring on one side of the gasket.

Sun and weather exposure speed up gasket wear. Owners who do not use a cover often need a gasket sooner.

The High Performance Gasket Kit is a straightforward DIY job: scrape the old gasket off, clean the rim and apply the new strip. Call 0434 010 411 if you would like help.

Can I use non-Big Green Egg accessories on my Egg?

Mixed picture: generic accessories work for some categories, Big Green Egg fit matters for others.

Where generic is fine: hand tools (tongs, gloves, brushes, skewers) from Tramontina or Pyralit work just as well as Big Green Egg branded tools. So do prep knives.

Where Big Green Egg fit matters: convEGGtor, EGGspander, grids, pizza stones, covers, fire bowl and rotisserie. These are sized for the Egg's firebox and ceramic shape. Generic versions may not fit or may leave airflow gaps that affect the cook.

Same applies to charcoal and starters: Big Green Egg lump charcoal is made for the Egg, and premium third-party lump charcoal also works well.

Will accessories sized for one Egg fit another Egg size?

Usually not. Most Big Green Egg accessories are sized for one or two Egg models.

A Large convEGGtor will not fit an XL. A Large pizza stone will not fit a Medium. Cover B for a Large in an intEGGrated Nest does not fit a Large in an Acacia Table, which takes Cover E. Sizing is set by the firebox diameter and the shape of the dome and base.
