This is the pellet I run on the showroom GMG for any brisket or beef cook.
For my personal Yoder YS640 I cook on BBQr's Delight pellets. I have written about why elsewhere. But when I run a brisket demo on our showroom GMG Peak Prime 2.0, or when a customer comes in asking about Texas-style bold smoke flavour for a brisket cook, Texas Blend is the pellet I reach for first.
The reason is the blend composition. Texas Blend is a deliberate three-wood mix: Black Oak as the clean-burning base (holds the heat with consistent BTU output), Hickory as the dominant smoke note (the Texas-style bacon-savoury smoke that pairs with beef), and a hint of Mesquite for the Lone Star State character without the harshness of pure mesquite. The result on a brisket cook is a deep mahogany bark, an unmistakable beef-friendly smoke profile, and a finished product that tastes like Texas BBQ rather than competition white-meat BBQ.
The other reason I keep this pellet in stock is the GMG grill compatibility story. Texas Blend is manufactured by Green Mountain Grills specifically for their pellet grills. The pellet dimensions, density, and burn rate are tuned to GMG's auger and PID controller. If you own a GMG Daniel Boone, Jim Bowie Prime Plus, or Peak Prime 2.0, this is the manufacturer-matched pellet. It works flawlessly in any other 6mm pellet grill too, but the GMG-on-GMG combination is a noticeably tight system.
For everyday weeknight cooks and competition-style white meats (chicken thighs, turkey, pork shoulder, ribs with mahogany finish), the milder BBQr's Delight Contest Mix Cherry/Pecan blend remains my recommendation. The two pellets are complementary, not competing. Serious cooks should keep both bags on hand and choose based on the cook.
What each hardwood contributes to the cook.
Texas Blend is a deliberate composition of three purpose-selected hardwoods. Each wood does something the others cannot, and the combination is the reason this pellet produces the unmistakable Texas BBQ profile:

Black Oak is the workhorse base wood in serious Texas BBQ. It produces a clean, mild smoke profile and holds heat output consistently across long cooks. Hickory is assertive: too much by itself becomes overwhelming on a long cook. GMG manufactures Texas Blend specifically for use in Green Mountain Grills pellet grills. Pellet grill manufacturers face a real engineering challenge: the auger feed rate and the PID temperature controller assume a specific pellet density and burn rate. Pellets that vary in density (cheap oak-filler pellets, or pellets with inconsistent moisture content) cause temperature swings and unpredictable burn behaviour.
