Whiskey is aged in new charred oak barrels. Over years of maturation, the spirit penetrates the wood and the wood penetrates the spirit. Flavour compounds including vanilla, caramel, and toasted oak become part of the barrel stave itself. When those staves are processed into pellets and burned, those same compounds release into the smoke and transfer to the food during the cook.
The result is a smoke character with the depth of oak plus the sweet, slightly vanilla warmth of whiskey barrel wood. No artificial flavouring is involved. The whiskey character in the smoke comes from the same source it comes from in the glass: time spent in barrel wood.

No Binders
