    Lumpwood vs Briquettes

    Why serious cooks use lumpwood

    Briquettes are compressed charcoal dust held together with binders and fillers. They burn consistently but they also burn dirty, produce more ash, and the binders can introduce off-flavours, particularly noticeable on longer cooks where the meat is exposed to the smoke for hours.

    Lumpwood charcoal is pure hardwood carbonised in a kiln. There is nothing in it except wood. It lights faster, burns hotter, produces less ash, and the flavour it contributes is clean and natural. For a long smoke on a brisket or pork shoulder, that difference accumulates over many hours and shows up clearly in the final result.

    Tip for kamado users: Lumpwood is the preferred fuel for kamado-style cookers including the Big Green Egg and Kamado Joe. The irregular piece sizes allow better airflow through the firebox, which helps the kamado's passive ventilation system regulate temperature more effectively than uniform briquettes.

    Is this the same as briquettes?
    No. Lumpwood charcoal is pure hardwood with nothing added. Briquettes are compressed charcoal dust held together with binders and fillers. Lumpwood lights faster, burns hotter, produces less ash, and delivers cleaner flavour. For long cooks especially, the difference in ash output and flavour quality is significant.
    Can I use this in my Big Green Egg or Kamado Joe?
    Yes. Masterbuilt Lumpwood is natural lump charcoal with no additives, making it suitable for any charcoal cooker including kamado-style grills. Lumpwood is actually the preferred fuel for kamados as the irregular piece sizes allow better airflow through the firebox compared to uniform briquettes.
    Does it work in the Masterbuilt Gravity Series GravityFed hopper?
    Yes, it is specifically designed for the Masterbuilt Gravity Series GravityFed hopper system. Load it directly into the hopper and the GravityFed mechanism feeds charcoal into the firebox throughout the cook without needing to open the lid or manually add fuel.
    Can I add wood chunks for extra smoke flavour?
    Yes. Placing hardwood chunks within the charcoal pile is a common technique for building additional smoke flavour. The chunks ignite gradually as the fire progresses through the charcoal, releasing smoke throughout the cook rather than all at once. We stock a range of smoking woods in the showroom if you want to try different flavour profiles.
    How do I store unused charcoal after opening the bag?
    Keep it dry. Transfer unused charcoal to a sealed container or resealable bag, or fold and clip the original bag closed. Lumpwood that gets damp is difficult to light and burns inconsistently. Charcoal that has been exposed to moisture can still be used once fully dried out, but prevention is easier than recovery.
    Does it produce much ash?
    Much less than briquettes. Because it is pure hardwood with no binders or fillers, very little non-combustible material remains after burning. This is particularly important for kamado cookers where ash accumulation can restrict the airflow that the temperature control system relies on.
