    Should I get the 10-inch or the 8-inch chef knife?

    Is a 10-inch chef knife difficult to control?

    A 10-inch chef knife requires a larger cutting board and slightly more deliberate control through precision tasks than an 8-inch. For experienced cooks who are comfortable with a pinch grip and rocking motion, the transition from 8-inch to 10-inch is straightforward. For beginner cooks still building knife technique, the 8-inch or 6-inch is a better starting point.     Is the 10-inch chef knife the same as the 10-inch scimitar?

    No. Both are 10 inches but they are completely different blade geometries for completely different tasks. The 10-inch scimitar has a pronounced curved blade designed for trimming fat caps and breaking down large meat primals. The 10-inch chef knife has the standard German chef knife profile for general cooking prep. The scimitar is a butchery and BBQ trimming knife. The chef knife is an all-purpose prep blade. They do not overlap in function.
