Butterfly the bird. For the full peri peri effect, spatchcock the chicken so it cooks flat and evenly. Rub generously, add a squeeze of lemon and a little oil, then let it sit for an hour before grilling skin-side down.

Salt, sugar, spices (paprika, onion, garlic, coriander, black pepper, chilli, cayenne, cumin, nutmeg), herbs (parsley, oregano), tomato powder, food acid (330), spice extract (160c) and anticaking agent (551).
