ConvEGGtor or EGGspander: which do I need first?
Different jobs, different priority order.
The ConvEGGtor ($110) is the first accessory every new owner needs. It is a ceramic heat shield that turns the Egg from direct grill into indirect oven and smoker. Without it you cannot do low-and-slow brisket, pulled pork or ribs. Mandatory.
The EGGspander ($250) is the capacity upgrade. It adds multi-level racking so you can cook two or three dishes on different levels at the same time. Buy it second, after you have done a few cooks and want more capacity or want to do half-direct, half-indirect setups.
Buy order: ConvEGGtor first, EGGspander when you outgrow single-level cooking.
Which Egg Cover (A, B, C, E or H) fits my Egg?
Cover sizing depends on which Egg you have AND which nest or table it sits in:
Cover A: Large or XLarge Egg in standard nest. The most common cover.
Cover B: Large or XL Egg in Acacia Table.
Cover C: XLarge Egg in standard nest.
Cover E: Large in extended Acacia Table configuration.
Cover H: Medium Egg in standard nest.

How do I season a BGE cast iron grid or skillet?
BGE cast iron arrives pre-seasoned, but a maintenance season after every 4 to 6 cooks keeps it non-stick and rust-free.
Standard maintenance season: after a cook (Egg still warm but not blazing), rub the grid or skillet down with a thin layer of grapeseed or canola oil using a paper towel. Wipe off excess. Let cool. Done.
Deep re-season if it has rusted or stripped: scrub the rust off with steel wool. Coat lightly with oil. Place in the Egg at 200°C for 1 hour. Let cool. Repeat 2 to 3 times until the surface darkens uniformly to deep black-brown.
Never wash cast iron with detergent. Wipe clean with hot water and a stiff brush only.
What temperature do I cook pizza at on the Egg?
320°C to 340°C is the sweet spot for Neapolitan-style pizza on the Pizza & Baking Stone.
Setup: ConvEGGtor in place (indirect), pizza stone on top of the ConvEGGtor (not directly on the grid), all preheated together for at least 30 minutes before the first pizza goes on. The stone needs to be properly hot.
Cook time at 320°C is 3 to 4 minutes. Turn the pizza halfway through. The base will leopard-spot, the cheese will bubble, and the crust will rise dramatically.
Below 280°C the dough goes too crisp without the leopard-spotted blistering. Above 360°C you start burning the base before the toppings cook. Find your sweet spot and stick to it.
How often should I replace the BGE gasket?
The factory felt gasket on a Big Green Egg typically lasts 3 to 5 years of regular use before needing replacement. Signs it is going: visible compression of the felt, smoke escaping where the dome meets the base, or charring on one side of the gasket from prolonged high-heat exposure.
Sydney sun and exposure accelerates gasket wear. Owners who do not use a cover often need a gasket sooner.
Replacement is straightforward DIY: scrape the old gasket off with a putty knife, clean the rim, apply the new felt strip with the adhesive backing. Takes 30 minutes including drying time. Can I use non-BGE accessories on my Big Green Egg?
Mixed picture: generic accessories work for some categories, brand-fit BGE is mandatory for others.
Where generic is fine: hand tools (tongs, gloves, brushes, skewers) from Tramontina or Pyralit work just as well as BGE-branded. So do prep knives.
Where brand-fit BGE is essential: ConvEGGtor, EGGspander, plate setters, grids, pizza stones, covers, fire bowl, rotisserie kits. These are all sized specifically for the Egg's firebox and ceramic geometry. Generic versions either do not fit or leave airflow gaps that compromise the cook.
Same applies to charcoal: BGE charcoal is cut for the firebox, but premium third-party brands like Argie Grillz Argentine Lump also work well.
Will accessories sized for one Egg fit another Egg size?
No. Almost every BGE accessory is sized specifically for one or two Egg models, and they do not interchange.
A Large ConvEGGtor will not fit an XL. A Large pizza stone will not fit a Medium. The Cover A for a Large in a nest does not fit an XL in an Acacia table. Sizing is set by the diameter of the firebox and the geometry of the dome and base.
Always order by Egg size. If you are not sure what model you have, the size badge is moulded into the ceramic next to the gasket or printed on the original BGE label. Call 0434 010 411 and we will help you confirm.
