How you rest meat after a long cook has a direct and measurable effect on the final result. The Grill Mate BBQ Blanket is a dedicated resting bag designed to manage that phase properly. Why Resting Meat Matters
When meat cooks, the muscle fibres contract and force moisture toward the centre and surface of the cut. At the point you pull it off the heat, those fibres are still tight and the moisture distribution is uneven. If you slice immediately, the fibres are still contracted and the moisture has nowhere to go except out onto the board. The result is dry, tight meat despite a technically correct cook.
Resting allows the muscle fibres to relax. As the internal temperature gradually equalises throughout the cut, the fibres reabsorb the moisture that was forced toward the surface during cooking. By the time you slice, the juices are distributed evenly and the meat holds them rather than releasing them the moment a knife goes in.
For a steak this process takes five to ten minutes. For a brisket or pork shoulder it takes a minimum of one hour, and two hours produces noticeably better results. The larger the cut, the more the rest matters and the more important it is that the rest happens in a controlled environment rather than on an uncovered bench.
The Problem With Foil and Improvised Solutions
Most home cooks rest meat wrapped in aluminium foil, sometimes with towels around it inside a cooler. This works to a degree. But it has real limitations.
Foil has no insulating properties of its own. It reflects some radiant heat but conducts heat readily, which means the meat cools relatively quickly depending on ambient conditions. On a winter evening, foil-rested brisket can drop temperature faster than the muscle fibres can fully relax, which cuts the effective rest short.
Foil also traps steam against the surface of the meat, which softens bark. For smoked brisket where the bark is part of what makes the cook worthwhile, resting tightly in foil is a trade-off that most competition cooks try to avoid.
The towels-in-a-cooler method does provide better insulation, but it is imprecise and awkward. The cooler needs to be roughly the right size, the towels need to fill the space well, and the whole setup is not designed for the task. It works until it does not.

What the Grill Mate BBQ Blanket Does Differently
The Grill Mate BBQ Blanket is built specifically for this job. It is not an improvised solution. It is a purpose-designed resting environment with two features that matter: 5-layer heat-reflective construction and a Tyvek exterior built for the demands of a BBQ environment.
5-Layer Construction with Aluminium Foil Insulation
The blanket uses a 5-layer construction with 3mm thick aluminium foil insulation at its core. The aluminium layer is fully leak-proof, which means moisture released by the meat during resting stays inside the blanket and gets reabsorbed back into the meat rather than weeping through to the outside.
The heat-reflective layers work by intercepting outgoing thermal radiation and redirecting it back toward the meat surface. When a brisket comes off the smoker at 95 degrees Celsius, it is radiating heat in all directions. In open air that heat disperses immediately. Inside the 5-layer construction, the reflective material slows that cooling rate significantly.
This is meaningfully different to passive insulation. Towels slow heat loss by trapping air. The 5-layer construction actively bounces heat back and retains moisture simultaneously. The result is a longer window at the temperatures where muscle fibres remain relaxed and capable of reabsorbing moisture, which is the entire point of the rest.

Tyvek Exterior
The outer shell is Tyvek, a high-density polyethylene synthetic that is tear-resistant, moisture-resistant, and handles the physical demands of a BBQ environment. Grease drips, smoke residue, and sauce transfers all come off with a hand wash. The exterior does not absorb grease or degrade with repeated use. After dozens of cooks it cleans up the same as it did the first time.
The wide mouth opening accommodates large cuts without forcing them. A full packer brisket, a bone-in pork shoulder, or a whole turkey loads cleanly. The heavy duty zipper closes the opening completely and operates reliably after repeated use and contact with grease.
Dimensions and Fit
The blanket measures 54cm length by 40cm width by 20cm height. This accommodates most full packer briskets including cuts up to 7 to 8 kilograms. For exceptionally large briskets, separating the point and flat before loading creates a more compact package that fits cleanly.
The same dimensions work well for bone-in pork shoulders, whole turkeys, legs of lamb, and large roasts. For smaller cuts like rib racks, the blanket works but provides more capacity than needed. The blanket earns its place most clearly on large cuts that benefit most from a controlled, extended rest.
How Long Can You Hold Meat in the Blanket
Large cuts like brisket and pork shoulder typically stay above 60 degrees Celsius for three to four hours in the blanket. That holding capability changes how you can plan a long cook. If your brisket finishes two hours ahead of when you need to eat, it goes straight into the blanket and holds. You do not need to rush the rest or reheat at the end.

For competition cooks and caterers, this extended holding time is particularly valuable. The blanket maintains quality for significantly longer than foil wrapping alone, which allows more flexibility around presentation windows and service times.
For holds beyond four hours, monitor the internal temperature periodically. If it drops below 60 degrees Celsius, food safety requirements mean you need to reheat before serving. The blanket typically maintains temperature well within this threshold for the first three to four hours.
Who This Is For
The Grill Mate BBQ Blanket is relevant to anyone who cooks large cuts seriously. If you smoke brisket, pork shoulders, or whole birds on a Yoder, a Big Green Egg, or any other serious smoker, the blanket addresses the one phase of the cook that most home setups handle worst.
At home we use it regularly for Picanha and roasts as well as brisket. One thing worth knowing: the blanket is wide enough that you can leave your Meater probe inside with the meat and monitor the temperature through the rest without opening it. That means you can track exactly when the internal temp has equalised and the meat is ready to slice, without disturbing the rest at any point.
Not having to mess around with Eskys, towels, and improvised setups while keeping everything together in one place is a genuine quality of life improvement for a long cook day. The results are consistently better than anything we achieved with foil and a cooler.
It is particularly useful if you cook for groups and need to hold finished meat at quality for more than an hour before serving. The blanket extends that window in a way that foil and towels cannot reliably match.
At $65 it is one of the least expensive accessories in our range relative to the difference it makes. The cost of a single ruined brisket is considerably more.
Care and Maintenance
Hand wash with warm soapy water after each use. The Tyvek exterior tolerates scrubbing without degrading. Focus cleaning on the interior base where rendered fat and juices collect. Rinse thoroughly until no soap residue remains, then air dry completely before storing. Do not store while damp.
The blanket is designed for resting cooked meat only. Do not use it in ovens, on grill grates, or inside smokers. Direct heat exposure damages both the Tyvek exterior and the reflective lining.
