The Four Saucemen Spiced Rum Rib Glaze takes the brand's original rib glaze and enhances it with one of New Zealand's best locally made rums. Black Collar Distillery in Northland supplied their spiced rum for the collaboration, a partnership built on shared values between two New Zealand makers. The result is a glaze designed to finish ribs, with the warmth and spice of good rum built into it. Gluten-free, dairy-free, and made with no artificial flavours, colours, or preservatives.

This is not a rum-flavoured glaze. It is the brand's proven rib glaze enhanced with real spiced rum from Black Collar Distillery in Northland, New Zealand. The rum makes up 3.5% of the glaze and brings a warm, rounded spice that sits behind the sweetness, giving it a depth of character you do not get from a standard sticky sauce. A genuine collaboration between two makers who share the same values.
What a rib glaze does. A glaze is what you brush on in the final stage of the cook. Where a rub builds the bark and the base layer of flavour, the glaze goes on toward the end and caramelises into a glossy, sticky, lacquered finish on the outside of the ribs. Add it late so it sets into a glaze rather than burning, and you get that shiny, competition-style finish.

The Full Method
Rub, then glaze. Season the ribs with The Four Saucemen Pork Rub and cook them through so the bark sets. In the final stage, brush on the Spiced Rum Rib Glaze and let it caramelise. The rub builds the flavour base and the bark, the glaze adds the sweet, spiced, sticky finish. This is the pairing the brand designed to work together.
