Most BBQ sauces are built on tomato and sugar and little else. This one cooks down dates for a natural dark sweetness, cocoa and coffee for earthy depth and a subtle bitterness that balances the sweet, and chilli for a gentle background heat. The result is a sauce with real complexity: earthy, tangy, a little sweet, a little smoky, and genuinely different from a standard supermarket bottle.
