    Carolina Smoke Creole is a bold, Cajun-style blend built on garlic, black pepper and a double hit of chilli, including smoky ancho. It brings genuine heat and a deep, savoury edge to whatever you sprinkle it on.

    Toast the spices. For shrimp and chicken, coat lightly with oil first so the rub clings, then cook hot and fast. The chilli and garlic toast into the surface and the heat blooms without the garlic catching.
