The Parrilla Method
A parrilla is not a kamado, a kettle, or a pellet smoker. The Argentine asado tradition is built around three specific design choices, and once you understand them, the appeal of an Argie Grillz grill makes sense in 30 seconds.
Adjustable Grate Height
A parrilla grate raises and lowers above the coal bed. Higher for low and slow, lower for searing. You control heat with distance rather than venting or fuel adjustment. A kamado does this with airflow. A parrilla does it with a hand-cranked wheel and your eye on the cook.
V-Channel Grill Bars
Parrilla bars are V-shaped, not round. Rendered fat runs down the channel and drains off the side instead of dripping onto the coals. The result is less flare-up, cleaner smoke, and meat that does not get an acrid taste from burnt fat.
Open Top, Coal-Forward
A parrilla has no lid. The coals do the work, and you build the fire as a working part of the cook, raking embers under whatever needs more heat. Argentine asadors call this brasero-style cooking. It is closer to wood-fired pizza than to a covered kettle BBQ.
