The Gaucho Series Classic Model is a portable Argentinian parrilla designed for wood or charcoal grilling. The parrilla features an adjustable height grill system that uses a hand-crank wheel to raise or lower the cooking grate relative to the fire. This adjustable height system gives you precise temperature control by moving food closer to or further from the heat source.
The entire unit is constructed from 304-grade stainless steel, including the frame, grill grate, drip tray, and firebox. Stainless steel construction resists rust and corrosion when exposed to heat, smoke, grease, and outdoor weathering, which makes the parrilla suitable for permanent outdoor installation or frequent use.
The cooking grate is a 2mm thick V-groove design. The V-shaped grooves channel fat and juices away from the meat and into the detachable drip tray below. This design prevents fat from dripping directly onto the fire, which eliminates flare-ups and creates more controlled cooking conditions.
The detachable drip tray sits below the cooking grate and collects rendered fat, juices, and drippings during cooking. The collected drippings can be used for basting meat during cooking or reserved for sauces and gravies after cooking.
Heavy-duty locking caster wheels are mounted to the base of the parrilla. The wheels allow you to move the 105kg unit for cleaning, storage, or repositioning. Lock the wheels to secure the parrilla in position during cooking.

304-grade stainless steel construction The entire parrilla is constructed from 304-grade stainless steel, including the frame, legs, firebox, cooking grate, drip tray, and height adjustment mechanism. 304-grade stainless steel is food-grade stainless steel that resists rust and corrosion when exposed to moisture, heat, smoke, grease, and outdoor weathering.
Stainless steel construction ensures the parrilla remains structurally sound and safe for food contact even with frequent use in high-heat environments. The material does not warp, bend, or degrade from heat exposure, and can be cleaned with soapy water or degreaser after use.
The 105kg weight and heavy-gauge stainless steel construction provide stability during cooking and resistance to wind or accidental bumps.
Adjustable height grill system with hand-crank wheel The cooking grate is mounted to an adjustable height mechanism controlled by a 400mm round hand-crank wheel. Turn the wheel to raise or lower the entire cooking grate relative to the charcoal or wood fire below.
This adjustable height system provides precise temperature control without requiring you to adjust the fire itself. Lower the grate (closer to fire) for high-heat searing or cooking smaller cuts quickly. Raise the grate (further from fire) for low-heat slow roasting or cooking large cuts without burning the exterior.
The hand-crank wheel provides mechanical advantage, which makes it easy to adjust the grate height even when the grate is loaded with food. The 400mm diameter wheel is large enough to operate comfortably while wearing heat-resistant gloves.
The height adjustment is continuous rather than stepped, which allows you to position the grate at any height within the adjustment range for precise temperature control.
2mm V-groove cooking grate (detachable) The cooking grate is fabricated from 2mm thick stainless steel with V-shaped grooves running the length of the grate. The V-grooves serve two purposes:
The 2mm thickness provides structural strength to support heavy loads without warping from heat. The grate is detachable for cleaning.
Detachable drip tray for drippings collection A 2mm stainless steel drip tray sits below the cooking grate and above the fire. The tray collects fat, juices, and drippings that drain from the meat through the V-groove grate.
Collecting drippings in the tray rather than allowing them to fall onto the fire eliminates flare-ups. Flare-ups occur when fat drips onto hot coals, ignites, and creates sudden bursts of flame that char the meat's exterior. By capturing drippings before they reach the fire, the V-groove grate and drip tray create controlled cooking conditions without flare-ups.
The collected drippings can be used during cooking for basting meat to add moisture and flavour. After cooking, the drippings can be strained and reserved for sauces, gravies, or chimichurri bases.
The drip tray is removable for cleaning and for emptying drippings during or after cooking.
Heavy-duty locking caster wheels for mobility Four heavy-duty caster wheels are mounted to the base of the parrilla. The wheels are rated to support the 105kg weight of the parrilla plus the weight of firewood or charcoal.
The wheels allow you to move the parrilla for cleaning, storage, or repositioning. Wheel the parrilla to different locations in your outdoor area, or move it into covered storage when not in use.
Each wheel includes a locking mechanism. Lock all four wheels to secure the parrilla in position during cooking. This prevents the parrilla from rolling if bumped or if cooking on an uneven surface.
Low maintenance and easy to clean Stainless steel surfaces are easy to clean. After cooking, allow the parrilla to cool, remove the cooking grate and drip tray, and wash both components with hot soapy water or degreaser. Wipe down the frame and firebox with a damp cloth to remove ash and residue.
The detachable grate and tray design makes cleaning more thorough than fixed grates that cannot be removed. You can access all surfaces of the grate and tray for complete cleaning.
Stainless steel does not absorb grease or flavours, which prevents cross-contamination between cooking sessions.

Low and slow rather than hot and fast: Parrilla cooking typically uses lower temperatures and longer cooking times compared to high-heat grilling. The adjustable height system allows you to position meat high above the fire for slow roasting, which renders fat gradually and creates tender results.
Fat management rather than flare-ups: The V-groove grate and drip tray capture fat before it reaches the fire. This eliminates flare-ups and creates controlled cooking conditions. The captured fat can be used for basting or reserved for sauces.

After each use: Allow the parrilla to cool completely. Remove ash from the firebox. Remove the cooking grate and drip tray and wash both with hot soapy water or degreaser. Wipe down the frame, firebox, and height adjustment mechanism with a damp cloth to remove ash and grease.
Deep cleaning: For heavy grease buildup, use a stainless steel cleaner or degreaser. Spray onto surfaces, let sit for a few minutes, then scrub with a non-abrasive sponge or brush. Rinse with water and dry.
Drip tray: Empty the drip tray after each cooking session. If you plan to reserve drippings for sauces or gravies, strain them through a fine-mesh strainer to remove solid particles, then refrigerate or freeze.

Yes, but lump charcoal or hardwood is recommended for better flavour and higher heat. Briquettes work but do not provide the same smoke flavour or cooking experience as lump charcoal or wood.
Control temperature by adjusting the height of the cooking grate using the hand-crank wheel. Lower the grate for higher heat, raise it for lower heat. You can also control temperature by adjusting the amount of fuel in the firebox.
The cooking grate dimensions provide space for approximately 6-10 steaks, 12-16 sausages, 2-3 whole chickens, or equivalent amounts of other meats depending on size and how they are arranged.
