Why Mallee Root

What Makes Wattle and Flame Different

Most lump charcoal sold in Australia is imported softwood or mixed hardwood of unknown origin. Mallee root is built differently. Here is what sets it apart.

Reason 01

Australian Native Hardwood

Mallee root is the root wood of the mallee shrub, a native hardwood that grows slowly across semi-arid Australia. The root system is significantly denser than the above-ground trunk, which is why mallee root produces more energy per kilogram than most imported lump.

What This Means More heat and longer burn from the same weight of charcoal.
Reason 02

Kiln-Fired in Regional NSW

Every batch is kiln-fired in regional New South Wales. Kiln-firing removes residual moisture and volatile compounds before carbonisation, producing charcoal that lights faster, burns cleaner, and delivers more consistent heat than air-dried alternatives.

What This Means Reliable ignition and clean smoke every cook.
Reason 03

No Fillers, No Binders

Both Classic and Signature contain nothing but kiln-fired mallee root charcoal. No softwood filler, no binding agents, no accelerants, no petroleum products. Clean-burning fuel that does not taint the food with chemical flavours during the cook.

What This Means The food tastes like the food, not the fuel.
Reason 04

Made in Small Batches

Wattle and Flame produces in small batches rather than at industrial scale. Each bag is from current-batch production with consistent sizing and quality control that large-volume imported charcoal cannot guarantee.

What This Means Consistent bag to bag, cook to cook.

Common Questions

Wattle and Flame FAQs

Questions buyers ask before their first bag of Australian mallee root charcoal.

Who are Wattle and Flame?
Wattle and Flame is an Australian charcoal producer making 100% native mallee root lump charcoal in regional New South Wales. They produce in small batches, kiln-fire every batch, and use no fillers, binders, or accelerants. BBQ Republic is an authorised stockist in Sydney.
What is mallee root charcoal and why does it matter?
Mallee root charcoal is made from the root wood of the mallee shrub, a native Australian hardwood. The root system is significantly denser than the above-ground trunk, which makes mallee root charcoal burn hotter and longer than most imported lump at the same weight. It sits in the same category as Argentinian quebracho: dense, long-burning, low-ash hardwood. Wattle and Flame kiln-fires every batch in regional NSW with no fillers or accelerants.
Should I buy Classic or Signature?
Both are the same mallee root charcoal from the same kiln. Classic (35-70mm, $46.95) lights faster and suits all charcoal cookers for everyday grilling, kamado cooks, and brisket sessions up to 9 hours. Signature (70mm+, $54.95) has more mass per piece, burns hotter and longer, and is built for overnight low and slow, large parrilla sessions, and professional-volume cooking where a single load needs to last. If you are unsure, the Classic is the right starting point.
Does it work in a Big Green Egg?
Yes. Both grades work well in all Big Green Egg sizes and all other ceramic kamado cookers. The Classic 35 to 70mm lump size loads cleanly into the ceramic firebox, lights reliably, and burns for 6 to 9 hours depending on vent settings. The Signature is particularly well suited to long overnight kamado cooks where you want maximum burn time from a single load.
Does it work in the Masterbuilt Gravity Series?
Yes. The Classic grade at 35 to 70mm feeds cleanly through the GravityFed hopper system. Load through the top of the hopper as you would with any lump charcoal. The density of the mallee root burns efficiently through the firebox.
How does it compare to Argie Grillz Argentinian charcoal?
Both are dense hardwood charcoals with long burn times and low ash. Argie Grillz at $50 for 15 kg ($3.33/kg) is the better value per kilo and the go-to for high-volume parrilla and asado cooks. Wattle and Flame Classic at $46.95 for 11 kg ($4.27/kg) is the Australian-made option, produced locally in NSW. The fundamental performance is comparable — the choice often comes down to supporting local production versus maximising value per kilo. Both are on the shelf at the showroom if you want to compare.
Is it available at the BBQ Republic showroom?
Yes. Both Wattle and Flame Classic and Signature 11 kg bags are in stock at our Wetherill Park showroom at 5 Vicars Place, Wetherill Park NSW 2164. Available for same-day pickup or Sydney metro delivery. Open Monday and Wednesday to Friday 10am to 5pm, Saturday 9am to 2pm. Closed Tuesday and Sunday.
